Mexican Meatballs (chipotle)

Just made these tonight after having them at chquitos the other night

12 meatballs
1 Tin diced tomatoes in puree
1/2 onion chopped
2 cloves garlic fine chopped
3 or 4 Chipotle peppers chopped fine
2 OXO cubes
Brown the meatballs and leave to drain.

Fry off the onions and garlic, add the tomatoes and peppers and cook down for about 5 mins might need to add some water before adding the meatballs. Now just simmer for 45-60 mins stiring every 15 mins

Serve with mexican rice or nacho chips

*Caution*

Chipotle peppers have a kick I have reduced the number to the above by almost half as i got a little carried away

It was mate although the amount of chipolte i used this time made it almost unbarable to eat and i have another portion to go

Nice Vat of natural yogurt at the standby then
